Thai Pork Larb Lettuce Cups

What you’ll need

  1. 500g pork mince
  2. 1 onion, finely sliced
  3. 1-2 red chillies, finely minced
  4. 3 garlic cloves, finely minced
  5. 1 Tbsp. sugar
  6. 2 Tbsp. fish sauce
  7. 4 limes
  8. 4 spring onions, thinly sliced
  9. Large handful of mint leaves
  10. 1 baby gem lettuce, washed
  11. Handful of coriander leaves

How to make it

  1. In a saucepan on low-med heat, cook pork mince for 5-10 mins until cooked through. Stir well to break up mince thoroughly.
  2. Remove off the heat then stir through the onion, chillies, garlic, sugar, fish sauce and juice of 2 limes. Stir well.
  3. Before serving toss through the spring onions and mint leaves.
  4. Lay out lettuce leaves and fill with a big spoonful of pork larb. Serve with a sprinkle of coriander leaves.
