What you’ll need

- 500g pork mince
- 1 onion, finely sliced
- 1-2 red chillies, finely minced
- 3 garlic cloves, finely minced
- 1 Tbsp. sugar
- 2 Tbsp. fish sauce
- 4 limes
- 4 spring onions, thinly sliced
- Large handful of mint leaves
- 1 baby gem lettuce, washed
- Handful of coriander leaves
How to make it
- In a saucepan on low-med heat, cook pork mince for 5-10 mins until cooked through. Stir well to break up mince thoroughly.
- Remove off the heat then stir through the onion, chillies, garlic, sugar, fish sauce and juice of 2 limes. Stir well.
- Before serving toss through the spring onions and mint leaves.
- Lay out lettuce leaves and fill with a big spoonful of pork larb. Serve with a sprinkle of coriander leaves.
