What you’ll need
- 500g SunPork rind on Pork Belly
- 1 tsp. salt
- 4 cups penne pasta, cooked
- ½ cup sundried tomato strips
- ½ cup artichoke hearts
- ½ kalamata olives, pitted
- 2 Tbsp. capers
- 2 cups rocket leaves
- 3 Tbsp. basil pesto
- 1 Tbsp. lemon juice
- Salt and pepper, to taste
How to make it
- Preheat oven to 160°C.
- Pat dry pork belly rind with a paper towel and rub with 1 tsp. salt. Place on baking tray and cook in oven for 3 hours.
- Remove and slice into 1cm pieces.
- Combine pasta, sundried tomato strips, artichoke hearts, olives, capers, rocket, pesto and lemon juice in a large bowl. Season with salt and pepper.
- Top with pork belly and serve immediately.
