What you’ll need
- 8 SunPork Pork Loin Steaks
- 1/8 tsp. ground cinnamon
- 2 tsp. cumin
- 2 tsp. paprika
- 100g natural yoghurt + extra to serve
- 1 tsp. oregano
- 2 lemons, rind & juice
- 2 Tbsp. olive oil
- Couscous
- 1 cup couscous
- 3 spring onions, sliced
- 20g black olives
- 100g cherry tomatoes, halved
- ½ red capsicum, thinly sliced
- ½ cucumber, sliced
How to make it
- Combine the cinnamon, cumin, paprika, yoghurt, oregano and 2 Tbsp.
lemon juice in a bowl. - Add the pork and coat well.
- Allow to marinate for 30 mins or ideally overnight.
- Prepare couscous according to pack instructions.
- Once cooled, add the spring onions, black olives, cherry tomatoes, red
capsicum, cucumber and 1 Tbsp. of lemon rind and stir to combine. - Heat the oil in a fry-pan over med heat.
- Cook the steaks for 4 mins each side or until cooked through.
- Serve the steaks with couscous, a side of yoghurt and a drizzle of
lemon juice.
