Greek Pork Steaks with Mediterranean Couscous

What you’ll need

  1. 8 SunPork Pork Loin Steaks
  2. 1/8 tsp. ground cinnamon
  3. 2 tsp. cumin
  4. 2 tsp. paprika
  5. 100g natural yoghurt + extra to serve
  6. 1 tsp. oregano
  7. 2 lemons, rind & juice
  8. 2 Tbsp. olive oil
  9. Couscous
  10. 1 cup couscous
  11. 3 spring onions, sliced
  12. 20g black olives
  13. 100g cherry tomatoes, halved
  14. ½ red capsicum, thinly sliced
  15. ½ cucumber, sliced

 

How to make it

  1. Combine the cinnamon, cumin, paprika, yoghurt, oregano and 2 Tbsp.
    lemon juice in a bowl.
  2. Add the pork and coat well.
  3. Allow to marinate for 30 mins or ideally overnight.
  4. Prepare couscous according to pack instructions.
  5. Once cooled, add the spring onions, black olives, cherry tomatoes, red
    capsicum, cucumber and 1 Tbsp. of lemon rind and stir to combine.
  6. Heat the oil in a fry-pan over med heat.
  7. Cook the steaks for 4 mins each side or until cooked through.
  8. Serve the steaks with couscous, a side of yoghurt and a drizzle of
    lemon juice.
