What you’ll need
500g SunPork rind on Pork Belly
1 tsp. salt
4 cups penne pasta, cooked
½ cup sundried tomato strips
½ cup artichoke hearts
½ kalamata olives, pitted
2 Tbsp. capers
2 cups rocket leaves
3 Tbsp. basil pesto
1 Tbsp. lemon juice
Salt and pepper, to taste
How to make it
Preheat oven to 160°C.
Pat dry pork belly rind with a paper towel and rub with 1 tsp. salt. Place on baking tray and cook in oven for 3 hours.
Remove and slice into 1cm pieces.
Combine pasta, sundried tomato strips, artichoke hearts, olives, capers, rocket, pesto and lemon juice in a large bowl. Season with salt and pepper.
