What you’ll need
INGREDIENTS
- 500g SunPork Fresh Foods Pork Tenderloin Fillet, sliced into strips
- 150g dried wood ear mushrooms
- 250g bean sprouts
- 200g vermicelli noodles
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 baby cos lettuce, chopped
- 4 Tbsp. soy sauce
- 3 garlic cloves, minced
- 3 Tbsp. coriander, chopped + extra to serve
- 2 Tbsp. sesame oil + extra to serve
- 2 Tbsp. Chinese black vinegar
- 1 tsp. sugar
- Fried shallots, to serve
- Salt and pepper, to taste
- Vegetable oil, for frying
How to make it
- In a medium bowl, add wood ear mushrooms and soak in boiling water until soft, then set aside until ready to serve. Repeat this step with the bean sprouts.
- In a large bowl, soak Vermicelli in boiling water for 4-5 mins. Drain and rinse under cold water. Set aside until ready to serve.
- Heat a fry-pan over high heat with vegetable oil. Add pork strips and cook for 2 mins.
- Add 1 Tbsp. soy sauce and season to taste. Cook for a further 5 mins or until cooked through, then remove from the heat and set aside.
- Prepare the dressing by whisking garlic, coriander, sesame oil, remaining soy sauce, vinegar and sugar into the bowl and mix well.
- Arrange vermicelli noodles on a large serving platter, then layer vegetables, wood ear mushrooms and pork on top of the noodles.
- Sprinkle with fried shallots and coriander, then drizzle the sauce over the top. Transfer the serving platter to the table, and get your guests to toss the salad as a group using chop sticks or a fork (a Chinese cultural tradition).
- Drizzle with sesame oil and enjoy a long life!
