What you’ll need


  • 1 SunPork Fresh Foods St Louis Rib Rack
  • ¼ cup brown sugar
  • 2 Tbsp. ground coffee
  • ½ tsp. chilli powder
  • ½ tsp. salt
  • ½ tsp. white pepper
  • 1 Tbsp. garlic powder
  • 1 Tbsp. smoked paprika
  • 1 Tbsp. onion powder
  • 1 tsp. ground coriander seeds
  • 1 lemon, halved to garnish

How to make it

  1. Pre-heat fan forced oven to 150⁰C.
  2. In a bowl, combine all the dry ingredients and coat the rib rack with rub on both sides.
  3. Place on a lined baking tray and set aside on the bench for approx. 15 mins until the rub has hydrated and changed colour.
  4. Place ribs into then oven, meat side down for 25 mins.  Remove ribs from the oven, flip, then cover with foil.
  5. Return to the oven for an additional 25 mins.
  6. Remove from the oven and leave covered for 10 mins to rest.
  7. To serve, slice into fingers and garnish with lemon wedges.
