What you’ll need
INGREDIENTS
- 1 SunPork Fresh Foods St Louis Rib Rack
- ¼ cup brown sugar
- 2 Tbsp. ground coffee
- ½ tsp. chilli powder
- ½ tsp. salt
- ½ tsp. white pepper
- 1 Tbsp. garlic powder
- 1 Tbsp. smoked paprika
- 1 Tbsp. onion powder
- 1 tsp. ground coriander seeds
- 1 lemon, halved to garnish
How to make it
- Pre-heat fan forced oven to 150⁰C.
- In a bowl, combine all the dry ingredients and coat the rib rack with rub on both sides.
- Place on a lined baking tray and set aside on the bench for approx. 15 mins until the rub has hydrated and changed colour.
- Place ribs into then oven, meat side down for 25 mins. Remove ribs from the oven, flip, then cover with foil.
- Return to the oven for an additional 25 mins.
- Remove from the oven and leave covered for 10 mins to rest.
- To serve, slice into fingers and garnish with lemon wedges.
