Dan & Steph's Asian Pork Meatball Salad
Try this tasty Asian Pork Meatball salad for dinner tonight! Crisp Asian style salad, with a sweet and salty dressing topped with flavorsome meatballs!

What you’ll need
- Meatballs
- 500g SunPork pork mince
- 3 Tbsp. red curry paste
- 1 Tbsp. coriander ,chopped
- 1 Tbsp. fish sauce
- 1 Tbsp. lime juice
- 1 egg
- 1/4 cup corn flour
- 6 green beans, finely sliced
- 4 – 6 tbs canola oil
- 2 Tbsp. oil
- Asian lettuce salad
- 100g of mixed lettuce
- 12 green beans, thinly sliced
- 2 shallots, thinly sliced
- 1/4 cucumber, Julienned
- Dressing
- 2 cloves garlic, grated
- 1 tsp. ginger, grated
- 1 tsp. light soy
- 1 tsp. sesame oil
- 1 tsp. toasted sesame seeds
- 1 tsp. honey
- 1 tsp. red chilli flakes
- 1 tsp. vinegar
- Coriander leaves, to serve
- Lime wedges, to serve
How to make it
- Place pork mince, red curry paste, coriander, fish sauce, beans, lime and egg in a bowl and mix well
- Heat 2 Tbs. oil in fry-pan over med. heat.
- Place spoonfuls of pork mixture in fry-pan and cook for 2 mins each side and until
- golden brown.
- Transfer to paper towel lined plate and repeat with remaining mixture
- Place all the meatballs into the oven at 180˚C for 5-10mins to finish off.
- Wash the lettuce and chop or tear into a large bowl. Add cucumber matchsticks, sliced beans and sliced shallots.
- Make dressing by adding all ingredients into a bowl & stir. Taste to ensure it is well balanced out
- Place salad and meatballs on plate and drizzle well with dressing. Serve with lime & fresh coriander
