Spiced Parmesan Crumb Pork Schnitty
This classic pork schnitzel dish is sure to tantalise your taste buds with its unique crumb coating, made from a delicious mix of parmesan and spices.

What you’ll need
INGREDIENTS
- 4 SunPork Fresh Foods Loin Steaks
- 1 cup plain flour
- 1 Tbsp. paprika
- 1 Tbsp. garlic powder
- 1 tsp. salt
- ½ tsp. white pepper
- 3 eggs, beaten
- 1 cup breadcrumbs
- ½ cup parmesan, grated
- 2 lemons, halved
- 1 head Oakleaf lettuce
- 1 cucumber, sliced
- 1 red cucumber, sliced
How to make it
- Place the loin steaks between 2 sheets of baking paper and pound with a mallet or rolling pin till ½ cm thick.
- On a plate combine flour, paprika, garlic powder, salt and pepper. Coat the pork in the dry flour mix then dip into the eggs. Mix the breadcrumbs and parmesan together then coat pork in the mix and press them firmly into the meat.
- In a deep pan over med heat, fill with vegetable oil until it’s 3cm deep. Drop a few breadcrumbs into the oil, and if it sizzles immediately the oil is hot enough. Carefully place the schnitzels into the oil. Cook one side of the taco shape for 4 mins, then turn over and cook for a further 4 mins. Rest on a rack or paper towel for 2mins
- While resting, grill the lemons for 2 mins in a pan over high heat.
- Combine lettuce, cucumber and capsicum and dress with your favourite dressing.
- Serve schnitzel with grilled lemon on the side. Enjoy.
