Thai Coconut Lime Pork
Do you feel the weekend calling?  This tasty Thai inspired coconut and lime marinated pork loin is sublime and perfect for grilling on the barbecue.

What you’ll need


  • 500g SunPork Fresh Foods Pork Loin, thinly sliced lengthways
  • 250ml coconut milk
  • 1/4 cup palm sugar
  • 2 tsp. lime zest
  • 2 Tbsp. lime juice
  • 2 tsp. fish sauce
  • 2 tsp. ginger, grated
  • 1/3 cup cashews, toasted
  • 1 lime, cut into wedges
  • 4 sprigs coriander, leaves removed

How to make it

  1. To make marinade, mix coconut milk, sugar, lime zest, lime juice, fish sauce and ginger.
  2. In a deep dish/tray, place pork and cover with marinade, cover and refrigerate for 4-12 hours.
  3. Remove pork from the marinade, then pat dry and season with salt and pepper.
  4. On a hot, oiled grill or barbecue add pork and cook for 2-3 mins then flip and cook for a further 5 mins.
  5. Depending on the thickness of the pork, repeat until cooked through.
  6. Rest meat for 5mins, then slice.
  7. Serve and enjoy!
