Cheese & Bacon Croquettes
Use up your leftover roast potatoes and bacon in this super easy croquette recipe. Packed full of bacon and cheese - what could be more tasty?!

What you’ll need
- 200g Bacon, diced
- 500g leftover roast potatoes, mashed
- 1 cup cheddar cheese, shredded
- ¼ Parmesan cheese, shredded
- 1 tsp. salt
- 1 tsp. pepper
- 2 cup panko breadcrumbs
- 2 eggs, whisked
- ¼ cup milk
- ½ plain flour
- Chilli jam, to serve
How to make it
- Heat fry-pan over med. heat.
- Cook bacon in fry-pan for 5 mins or until crispy.
- In a large bowl, combine mashed potatoes, salt, pepper, bacon, Cheddar cheese and Parmesan cheese. Mix until well combined.
- Combine whisked eggs and milk in bowl.
- Scoop about 1/3 of a cup of potato mixture and form it into an egg shape.
- Coat potato ball in flour. Dip in egg mixture then coat in panko breadcrumbs. Repeat process until all the potato mixture has been used.
- Heat deep fryer to 180˚C.
- Place croquettes into oil and cook until golden brown.
- Serve immediately with chilli jam.
