Bacon & Cheddar Croquettes
Creamy mashed potato, crispy bacon, sharp cheddar and a smoky paprika kick, these crunchy bites are dangerously good. Golden on the outside, cheesy and fluffy on the inside.

What you’ll need
INGREDIENTS
- 500g SunPork bacon, cooked, diced
- 800g mashed potato, cooled
- 200g cheddar, grated
- 1 Tbsp. smoked paprika
- 3 cups flour
- 4 eggs, lightly beaten
- 4 cups breadcrumbs
- Vegetable oil, for frying
Chipotle Mayo
- ½ cup mayo
- 2 tsp. chipotle in adobo
- 1 garlic clove, minced
- ¼ lemon, juiced
- Salt and pepper, to taste
How to make it
- In a bowl, combine the bacon, mashed potato, cheddar and smoked paprika, then season with salt and pepper.
- Set up a crumbing station with three shallow bowls, fill one with flour, one with beaten eggs, and one with breadcrumbs.
- Roll a heaped Tbsp. of the potato mixture into small balls.
- Dip each one into the flour, then the egg, then the breadcrumbs and set aside. Repeat until all the potato mixture is finished.
- Heat oil in a med. pot or deep fryer over med-high heat. Fry the croquettes in batches for 3-4 mins or until golden and crunchy.
- Drain on paper towel.
- In a small bowl, mix all the chipotle mayo ingredients until well combined.
- Serve while hot.
