What you’ll need

INGREDIENTS

  • 500g SunPork bacon, cooked, diced
  • 800g mashed potato, cooled
  • 200g cheddar, grated
  • 1 Tbsp. smoked paprika
  • 3 cups flour
  • 4 eggs, lightly beaten
  • 4 cups breadcrumbs
  • Vegetable oil, for frying

Chipotle Mayo

  • ½ cup mayo
  • 2 tsp. chipotle in adobo
  • 1 garlic clove, minced
  • ¼ lemon, juiced
  • Salt and pepper, to taste

How to make it

  1. In a bowl, combine the bacon, mashed potato, cheddar and smoked paprika, then season with salt and pepper.
  2. Set up a crumbing station with three shallow bowls, fill one with flour, one with beaten eggs, and one with breadcrumbs.
  3. Roll a heaped Tbsp. of the potato mixture into small balls.
  4. Dip each one into the flour, then the egg, then the breadcrumbs and set aside. Repeat until all the potato mixture is finished.
  5. Heat oil in a med. pot or deep fryer over med-high heat. Fry the croquettes in batches for 3-4 mins or until golden and crunchy.
  6. Drain on paper towel.
  7. In a small bowl, mix all the chipotle mayo ingredients until well combined.
  8. Serve while hot.
