Cheese & Bacon Croquettes
Use up your leftover roast potatoes and bacon in this super easy croquette recipe. Packed full of bacon and cheese - what could be more tasty?!

What you’ll need
200g Bacon, diced
500g leftover roast potatoes, mashed
1 cup cheddar cheese, shredded
¼ Parmesan cheese, shredded
1 tsp. salt
1 tsp. pepper
2 cup panko breadcrumbs
2 eggs, whisked
¼ cup milk
½ plain flour
Chilli jam, to serve
How to make it
Heat fry-pan over med. heat.
Cook bacon in fry-pan for 5 mins or until crispy.
In a large bowl, combine mashed potatoes, salt, pepper, bacon, Cheddar cheese and Parmesan cheese. Mix until well combined.
Combine whisked eggs and milk in bowl.
Scoop about 1/3 of a cup of potato mixture and form it into an egg shape.
Coat potato ball in flour. Dip in egg mixture then coat in panko breadcrumbs. Repeat process until all the potato mixture has been used.
Heat deep fryer to 180˚C.
Place croquettes into oil and cook until golden brown.
