What you’ll need
- 300g streaky bacon
- 1 whole chicken
- 50 g butter
- Salt and pepper to season
- Gravy, to serve
- Stuffing
- 300g pork mince
- 2 Tbsp. Olive oil
- 20 g butter
- ½ brown onion, finely chopped
- 2 garlic cloves, minced
- 3 cups bread crumbs
- ½ cup pistachio nuts
- 1 egg
- 2 Tbsp. fresh sage, chopped
- Salt and pepper to season
How to make it
- Pre-heat oven to 180˚
- Combine stuffing ingredients together in a bowl.
- Place chicken on a lined baking tray. Place stuffing into the chicken cavity until full. Any leftover stuffing can be placed into a separate baking tray and cooked along side the chicken.
- Rub butter all over the chicken skin.
- Layer bacon on top of the chicken and fix in place with toothpicks. Season with salt and pepper.
- Place chicken into the oven for 1 hour and 30 mins or until the internal temperature reaches 74˚
- Remove from oven and allow to sit for 20 mins.
- Slice and serve with gravy, roasted vegetables and lots of stuffing!
