What you’ll need

INGREDIENTS

  • 10 SunPork Fresh Foods Bacon Rashers
  • ½ cup pecans, roughly chopped
  • ½ cup walnuts, roughly chopped
  • 2 Tbsp. honey
  • ¾ cup brown sugar
  • 3 eggs, whites and yolks separated
  • ½ cup caster sugar
  • 300g mascarpone cream
  • 1 tsp. vanilla extract
  • 1¼ cups hot black coffee
  • 2 Tbsp. coffee liqueur
  • 200g lady fingers biscuits
  • Cocoa powder, for dusting

How to make it

  1. Pre-heat fan forced oven to 180°C.
  2. In a mixing bowl, toss nuts with honey and 3 Tbsp. brown sugar, then transfer to a lined baking tray. Place in the oven and cook for 10 mins, tossing once, until toasted and golden.
  3. Rub both sides of the bacon strips with the remaining brown sugar and place onto a lined baking tray. Bake in the oven for 15 mins or until candied, flipping once while cooking.
  4. Allow bacon to cool slightly, then roughly chop and mix with the toasted nuts.
  5. Using a hand held mixer, beat the egg yolks and caster sugar together until the mixture thickens and turns pale yellow.
  6. Add the mascarpone and vanilla extract and beat until just combined.
  7. In a separate large bowl, beat egg whites until they form stiff peaks.
  8. Gently fold half the mascarpone mixture into the egg whites. Once mostly combined, add the remaining mascarpone mixture and continue to fold through until just combined.
  9. Mix hot coffee and liqueur in a small bowl. Dip lady fingers in the coffee mixture and line the bottom of a 20cm deep dish.
  10. Spread half the mascarpone mixture over the biscuits. Sprinkle over the bacon and nuts then add another layer of lady fingers and top with the remaining mascarpone mixture.
  11. Cover and refrigerate for 6 hours or overnight.
  12. Dust with a layer of cocoa powder before serving and enjoy!
