Bacon Wrapped Pork Medallions with Garlic Butter Prawns

What you’ll need
- 2 Pork Medallions*
- 2 streaky bacon rashers
- 1 Tbsp. olive oil
- 250g raw peeled prawns
- ¼ cup butter, melted
- 4 cloves garlic, minced
- 1 tsp. ground garlic
- Salt & pepper, to taste
- 10 Brussels sprouts, halved
*You can make medallions using our SunPork Pork Loin Steaks. Simply trim the steaks back.
How to make it
- Wrap streaky bacon rashers around each pork medallion. Fix in place with toothpicks.
- Heat oil in frypan over med. heat.
- Place medallions in frypan and cook for 6 mins each side until cooked through. Add brussels sprouts to pan, and cook for 1.5mins on each side, then remove and set aside.
- Heat another frypan over med. heat. Add butter, ground garlic, salt, pepper and garlic and cook for 1 min. Add prawns and cook for 2 mins each side.
- Serve garlic prawns on top of pork mignons with charred brussels sprouts.
