Bacon Wrapped Pork Medallions with Garlic Butter Prawns

What you’ll need
2 Pork Medallions*
2 streaky bacon rashers
1 Tbsp. olive oil
250g raw peeled prawns
¼ cup butter, melted
4 cloves garlic, minced
1 tsp. ground garlic
Salt & pepper, to taste
10 Brussels sprouts, halved
*You can make medallions using our SunPork Pork Loin Steaks. Simply trim the steaks back.
How to make it
Wrap streaky bacon rashers around each pork medallion. Fix in place with toothpicks.
Heat oil in frypan over med. heat.
Place medallions in frypan and cook for 6 mins each side until cooked through. Add brussels sprouts to pan, and cook for 1.5mins on each side, then remove and set aside.
Heat another frypan over med. heat. Add butter, ground garlic, salt, pepper and garlic and cook for 1 min. Add prawns and cook for 2 mins each side.
Serve garlic prawns on top of pork mignons with charred brussels sprouts.
