Bacon & Apple Fritter Bites with Cider Glaze

What you’ll need
INGREDIENTS
4 rashers SunPork Fresh Foods Bacon, diced
1 cup plain flour
2 Tbsp. white sugar
1 tsp. baking powder
½ tsp. cinnamon
Pinch of salt
50ml milk
1 egg, beaten
1½ tsp. vanilla paste
1 green apple, diced
Vegetable oil (for frying)
250g icing sugar
3 Tbsp. apple cider
How to make it
In a bowl, whisk together flour, sugar, baking powder, cinnamon and a pinch of salt.
In a jug or bowl, combine milk, beaten egg and 1 tsp. vanilla paste. Slowly pour the wet mixture into the dry ingredients, stirring until just combined.
Add the bacon and apple and fold through the mixture until evenly distributed.
Pour 2-3cm deep of oil into a deep fry-pan and heat to approx. 170˚C over med-high heat.
Carefully drop spoonful’s of batter into the hot oil in batches, being careful not to overcrowd the pan.
Fry for 1-2 mins, turning occasionally, until fritters are golden brown all over.
Transfer to a wire rack to drain. Repeat until all the batter is used.
While fritters cool, make the glaze by whisking icing sugar, apple cider and remaining ½ tsp. vanilla paste in a bowl until smooth.
Arrange fritters on a serving dish, dust with extra icing sugar and drizzle with cider glaze.
