Charred Tenderloin with BBQ Greens

What you’ll need
INGREDIENTS
- 1 SunPork Fresh Foods Pork Tenderloin
- 1 bunch fresh parsley
- 2 garlic cloves, crushed
- 2 Tbsp. red wine vinegar
- ½ tsp. brown sugar
- 1/3 cup olive oil
- 2 bunches broccolini
- 2 zucchini, cut into discs
- 6 spring onions
- 1 bunch asparagus
- 500g brussel sprouts
- Salt and pepper to taste
How to make it
- Place parsley, garlic, vinegar, sugar and olive oil in blender and blitz to form dressing and set aside.
- Heat bbq and season tenderloin.
- Grill tenderloin for 6 mins a side, then set aside.
- Place vegetables on the grill and drizzle with oil and season with salt and pepper and grill for 5 mins and transfer to serving platter.
- Return tenderloin to grill for 1 min, turning to evenly heat.
- Slice into thin medallions and serve on top of greens.
- Drizzle with parsley dressing
- Serve and enjoy!
