Charred Tenderloin with BBQ Greens

What you’ll need


  • 1 SunPork Fresh Foods Pork Tenderloin
  • 1 bunch fresh parsley
  • 2 garlic cloves, crushed
  • 2 Tbsp. red wine vinegar
  • ½ tsp. brown sugar
  • 1/3 cup olive oil
  • 2 bunches broccolini
  • 2 zucchini, cut into discs
  • 6 spring onions
  • 1 bunch asparagus
  • 500g brussel sprouts
  • Salt and pepper to taste

How to make it

  1. Place parsley, garlic, vinegar, sugar and olive oil in blender and blitz to form dressing and set aside.
  2. Heat bbq and season tenderloin.
  3. Grill tenderloin for 6 mins a side, then set aside.
  4. Place vegetables on the grill and drizzle with oil and season with salt and pepper and grill for 5 mins and transfer to serving platter.
  5. Return tenderloin to grill for 1 min, turning to evenly heat.
  6. Slice into thin medallions and serve on top of greens.
  7. Drizzle with parsley dressing
  8. Serve and enjoy!
