What you’ll need

INGREDIENTS

  • 1 rack SunPork Fresh Foods St Louis Ribs
  • ¼ cup brown sugar
  • 2 Tbsp. smoked paprika
  • 1 Tbsp. mustard powder
  • 1 Tbsp. salt
  • 1 Tbsp. garlic powder
  • 1 Tbsp. onion powder
  • 1 tsp. ground coriander seeds
  • 100ml apple juice
  • 2 Tbsp. butter

How to make it

  1. Pre-heat barbecue or smoker to 120°C/250°F.
  2. Prepare ribs by removing the membrane from the bone side of the rack and trim any excess pieces of fat.
  3. In a small bowl, combine brown sugar, smoked paprika, mustard powder, salt, garlic powder, onion powder and ground coriander seeds and rub over both sides of the rib racks, cover and refrigerate for 1 hr.
  4. Place ribs into the smoker meat side down for approx. 2 hrs, spritz/brush with apple juice every 30 mins.
  5. Remove from smoker and place rib rack onto a large sheet of foil, brush each side with apple juice and add butter to meaty side and wrap tightly.
  6. Return ribs to smoker, meat side down for approx. 1 hr or until meat on the bone is tender.
  7. Remove ribs from smoker, unwrap and brush generously with remaining hot honey.  Return to smoker uncovered bone side down for approx. 10 mins.
  8. Remove from smoker, rest for 10 mins and slice into fingers.
  9. Serve and enjoy!
