What you’ll need

INGREDIENTS

  • 500g SunPork loin steaks
  • 1 Tbsp. light soy sauce
  • 1 tbsp. fish sauce
  • 1 tsp. palm sugar, grated
  • 1 tsp. ground white pepper
  • 3 garlic cloves, minced
  • 1 cucumber, chopped
  • ½ red onion, finely chopped
  • 200g cherry tomatoes, halved
  • 2 bunches coriander, stems removed
  • 2 bunches mint, stems removed
  • Crispy shallots, to garnish

Dressing

  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. fish sauce
  • 1 Tbsp. palm sugar, grated
  • 2 red chillies, finely chopped
  • 1 shallot, thinly sliced

How to make it

  1. Combine soy sauce, fish sauce, palm sugar, white pepper, and garlic. Add the pork and toss to coat. Cover and marinate for at least 20 mins in the fridge.
  2. In a bowl, whisk together lime juice, fish sauce, palm sugar, chillies, and shallot until the sugar is dissolved.
  3. Heat a fry pan over med-high heat. Cook the pork steaks for 4 mins a side and nicely browned. Remove and rest for a few minutes, then slice into bite-sized pieces.
  4. In a serving dish add cucumber, red onion, cherry tomatoes, coriander, mint and pork. Drizzle over the dressing and toss gently.
  5. Top with crispy shallots and serve immediately.
