What you’ll need
INGREDIENTS
- 500g SunPork loin steaks
- 1 Tbsp. light soy sauce
- 1 tbsp. fish sauce
- 1 tsp. palm sugar, grated
- 1 tsp. ground white pepper
- 3 garlic cloves, minced
- 1 cucumber, chopped
- ½ red onion, finely chopped
- 200g cherry tomatoes, halved
- 2 bunches coriander, stems removed
- 2 bunches mint, stems removed
- Crispy shallots, to garnish
Dressing
- 2 Tbsp. fresh lime juice
- 1 Tbsp. fish sauce
- 1 Tbsp. palm sugar, grated
- 2 red chillies, finely chopped
- 1 shallot, thinly sliced
How to make it
- Combine soy sauce, fish sauce, palm sugar, white pepper, and garlic. Add the pork and toss to coat. Cover and marinate for at least 20 mins in the fridge.
- In a bowl, whisk together lime juice, fish sauce, palm sugar, chillies, and shallot until the sugar is dissolved.
- Heat a fry pan over med-high heat. Cook the pork steaks for 4 mins a side and nicely browned. Remove and rest for a few minutes, then slice into bite-sized pieces.
- In a serving dish add cucumber, red onion, cherry tomatoes, coriander, mint and pork. Drizzle over the dressing and toss gently.
- Top with crispy shallots and serve immediately.
