What you’ll need

  1. 250g Three Aussie Farmers Shoulder Ham Leftovers
  2. 2 sheets puff pastry
  3. 2 medium potatoes, grated
  4. 1 carrot, grated
  5. 2 spring onions, thinly sliced
  6. ½ cup tomato relish
  7. 4 eggs, whisked

How to make it

  1. Preheat oven to 200 degrees Celsius. Spray muffin tin with canola oil and set aside.
  2. Using a pastry cutter, cut out 12 circles from the puff pastry and place in muffin tins. Ensure the sides of the tin are covered in pastry also.
  3. Place a dollop of tomato relish at the bottom of each pastry cup.
  4. Combine potatoes, carrot, spring onions and ham in a large mixing bowl. Add the 4 whisked eggs.
  5.  Spoon mixture into each pastry cup and place into oven for 20 mins.
  6. Enjoy hot or cold!
