What you’ll need

- 250g Three Aussie Farmers Shoulder Ham Leftovers
- 2 sheets puff pastry
- 2 medium potatoes, grated
- 1 carrot, grated
- 2 spring onions, thinly sliced
- ½ cup tomato relish
- 4 eggs, whisked
How to make it
- Preheat oven to 200 degrees Celsius. Spray muffin tin with canola oil and set aside.
- Using a pastry cutter, cut out 12 circles from the puff pastry and place in muffin tins. Ensure the sides of the tin are covered in pastry also.
- Place a dollop of tomato relish at the bottom of each pastry cup.
- Combine potatoes, carrot, spring onions and ham in a large mixing bowl. Add the 4 whisked eggs.
- Spoon mixture into each pastry cup and place into oven for 20 mins.
- Enjoy hot or cold!
