What you’ll need
250g Three Aussie Farmers Shoulder Ham Leftovers
2 sheets puff pastry
2 medium potatoes, grated
1 carrot, grated
2 spring onions, thinly sliced
½ cup tomato relish
4 eggs, whisked
How to make it
Preheat oven to 200 degrees Celsius. Spray muffin tin with canola oil and set aside.
Using a pastry cutter, cut out 12 circles from the puff pastry and place in muffin tins. Ensure the sides of the tin are covered in pastry also.
Place a dollop of tomato relish at the bottom of each pastry cup.
Combine potatoes, carrot, spring onions and ham in a large mixing bowl. Add the 4 whisked eggs.
Spoon mixture into each pastry cup and place into oven for 20 mins.
