What you’ll need

INGREDIENTS

  • 2 racks SunPork Fresh Foods Meaty Loin Ribs
  • 2 Tbsp. smoked paprika
  • 2 Tbsp. fresh thyme, extra to serve
  • 1 Tbsp. black pepper, ground
  • 1 Tbsp. garlic powder
  • 2 Tbsp. kosher salt
  • 1 Tbsp. olive oil
  • 1 cup American mustard
  • 3 Tbsp. seeded mustard
  • 1 cup apple cider vinegar
  • ½ cup brown sugar
  • 1 Tbsp Worcestershire sauce
  • Fries, to serve

How to make it

  1. Preheat fan-forced oven to 150⁰C.
  2. Mix paprika, thyme, pepper, garlic powder and salt to make a rustic dry rub.
  3. Coat rib racks with oil and dust with rub.
  4. Place ribs on a lined baking tray and roast for 45mins, turn and roast for a further 45mins.
  5. While ribs are roasting, prepare mustard barbecue sauce.
  6. Add mustards, cider vinegar, sugar and Worcestershire sauce to a saucepan and simmer until sauce starts to thicken and set aside.
  7. Remove any pan juices from the oven tray and brush ribs with sauce.  Increase oven temperature to 220⁰C and cook for an additional 15 mins.
  8. Remove ribs from the oven and brush with sauce for the final time.
  9. Slice ribs and plate with fries and garnish with fresh thyme.
  10. Serve and enjoy!
