What you’ll need
INGREDIENTS
- 2 racks SunPork Fresh Foods Meaty Loin Ribs
- 2 Tbsp. smoked paprika
- 2 Tbsp. fresh thyme, extra to serve
- 1 Tbsp. black pepper, ground
- 1 Tbsp. garlic powder
- 2 Tbsp. kosher salt
- 1 Tbsp. olive oil
- 1 cup American mustard
- 3 Tbsp. seeded mustard
- 1 cup apple cider vinegar
- ½ cup brown sugar
- 1 Tbsp Worcestershire sauce
- Fries, to serve
How to make it
- Preheat fan-forced oven to 150⁰C.
- Mix paprika, thyme, pepper, garlic powder and salt to make a rustic dry rub.
- Coat rib racks with oil and dust with rub.
- Place ribs on a lined baking tray and roast for 45mins, turn and roast for a further 45mins.
- While ribs are roasting, prepare mustard barbecue sauce.
- Add mustards, cider vinegar, sugar and Worcestershire sauce to a saucepan and simmer until sauce starts to thicken and set aside.
- Remove any pan juices from the oven tray and brush ribs with sauce. Increase oven temperature to 220⁰C and cook for an additional 15 mins.
- Remove ribs from the oven and brush with sauce for the final time.
- Slice ribs and plate with fries and garnish with fresh thyme.
- Serve and enjoy!
