Pulled Pork Tacos with Mango Salsa
There's nothing like a slow cooked pulled pork taco, and this dish is no exception. With rich and tender spiced pork and a tangy sweet tropical fruit salsa, this dish is a winner any day of the week.

What you’ll need
INGREDIENTS
- 1.5kg SunPork Fresh Foods Collar Butt
- 350ml pineapple juice
- 1 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 2 Tbsp. smoked paprika
- 1 mango, finely diced
- 1 avocado, finely diced
- 1 small red onion, finely diced
- 1 small pineapple, finely diced
- 1 jalapeno, diced
- 4 sprigs fresh coriander, chopped
- 1 lime, juiced
- 24 tortillas
- Salt and pepper, to taste
How to make it
- In a slow cooker place pork, pineapple juice, garlic powder, onion powder, smoked paprika and season generously. Turn slow cooker to low and cook for 11 hrs.
- Carefully remove the pork from slow cooker and allow to rest for 10 mins, then gently pull the pork apart with 2 forks.
- In a large bowl, combine mango, avocado, onion, pineapple, jalapeno, coriander and lime juice, then toss to mix well. Season to taste.
- Warm tortillas in the microwave for 30 seconds, then layer with pulled pork and top with mango salsa.
- Serve and enjoy!
TIP: pulled pork can be frozen, just ensure that you add a couple of spoons of the cooking liquid to container prior to freezing to ensure moisture is retained when reheated.
