What you’ll need

- 1.5kg SunPork Rolled Pork Leg Roast, rind on
- 1 Tbsp. salt
- 1 tsp. oil
- 120g butter
- 3 Tbsp. garlic, minced
- 1 tsp. rosemary, chopped
- 600g potatoes, peeled
How to make it
- Pre-heat fan forced oven to 180ºC.
- Pat rind of the leg roast dry then rub with salt and oil.
- Place on oven tray and roast for 1 hr and 30 mins.
- Meanwhile, mix the butter, garlic and rosemary together in a small bowl.
- Rub the potatoes with the butter mix and roast with the pork for 40 mins
or until golden and crispy. - Serve and enjoy!
- Follow the instructions below to perfect your crackling.
- Pour boiling water over the pork skin (this opens up the pores and allows it
to dry out easily). - Pat dry with paper towel and place into the fridge uncovered to dry out for
at least 1 hr (ideally overnight). - When ready to cook, score the skin in 1 cm intervals with a sharp knife.
- Rub oil and salt all over the rind—use a light covering of oil, but be generous
with the salt!
