What you’ll need
1.5kg SunPork Rolled Pork Leg Roast, rind on
1 Tbsp. salt
1 tsp. oil
120g butter
3 Tbsp. garlic, minced
1 tsp. rosemary, chopped
600g potatoes, peeled
How to make it
Pre-heat fan forced oven to 180ºC.
Pat rind of the leg roast dry then rub with salt and oil.
Place on oven tray and roast for 1 hr and 30 mins.
Meanwhile, mix the butter, garlic and rosemary together in a small bowl.
Rub the potatoes with the butter mix and roast with the pork for 40 mins
or until golden and crispy.

Follow the instructions below to perfect your crackling.
Pour boiling water over the pork skin (this opens up the pores and allows it
to dry out easily).
Pat dry with paper towel and place into the fridge uncovered to dry out for
at least 1 hr (ideally overnight).
When ready to cook, score the skin in 1 cm intervals with a sharp knife.
Rub oil and salt all over the rind—use a light covering of oil, but be generous
with the salt!
