Pork Chop with Crying Tiger Sauce

What you’ll need
INGREDIENTS
- 2 SunPork Fresh Foods Pork Chop, 2-3cm thick
- 2 shallots, finely diced
- 100ml fish sauce
- 2 tsp. sugar
- 1 Tbsp. sesame seeds, toasted and crushed
- 2 spring onions, finely sliced
- ¼ cup coriander, finely chopped
- 2 birds eye chilli, finely sliced
- 2 limes, juiced.
- Salt and pepper, to taste
How to make it
- Heat a griddle pan over med-high heat. Cook the pork chops using the 6-2-2 method: 6 mins one side then flip and cook for a further 2 mins. Remove from the pan and rest for 2 mins.
- While the pork chop is resting, combine the remaining ingredients together in a bowl and mix until the sugar has dissolved. Transfer to a small ramekin for serving.
- Slice the pork into strips.
- Serve and enjoy!
TIP: Make the sauce ahead of time and let the flavours slowly develop.
