What you’ll need

  1. 4 SunPork Pork Cutlets
  2. 2 Tbsp. honey
  3. 2 Tbsp. Dijon mustard
  4. 1 tsp. fennel seeds
  5. 2 Tbsp. olive oil
  6. 200g sage & onion stuffing mix
  7. 1 egg
  8. 190ml water
  9. 1 bunch dutch carrots, tops trimmed
  10. 3 potatoes, peeled & quartered
  11. Broccolini, to serve
  12. Green beans, to serve
  13. Gravy, to serve

How to make it

  1. Pre-heat fan forced oven to 180°C.
  2. Combine honey, mustard and fennel seeds in a bowl then toss cutlets
    through the mix to coat.
  3. Heat the oil in a fry-pan over med heat then sear each cutlet until
    golden brown.
  4. Meanwhile, mix stuffing mixture, egg and water in a bowl and form
    into 12 balls.
  5. Place cutlets on a tray with the carrots, potatoes and stuffing then
    bake for 30 mins.
  6. Serve cutlets with broccolini, green beans, roasted veg, stuffing balls
    and gravy.
