Pork Arayes with Garlic Yoghurt Sauce

What you’ll need
INGREDIENTS
- 500g SunPork Fresh Foods Pork Mince
- 1 onion, finely chopped
- ½ cup parsley, roughly chopped
- ½ cup coriander, roughly chopped
- 5 garlic cloves, minced
- 1 Tbsp. ground coriander
- 1 Tbsp. cumin
- 1 Tbsp. smoked paprika
- 2 tsp. cinnamon
- 1 Tbsp. allspice
- 3 pitas, halved
- Salt and pepper, to season
- Oil
Garlic Yoghurt Sauce
- ½ cup Greek yogurt
- 2 Tbsp. parsley, roughly chopped
- 2 Tbsp. coriander, roughly chopped
- 2 Tbsp. lemon juice
- ¼ cup tahini
- 3 garlic cloves, minced
- 1 Tbsp. olive oil
How to make it
- Pre-heat fan forced oven to 180°C.
- In a large bowl, combine pork mince, onion, parsley, coriander, garlic, spices and 1 Tbsp. olive oil then season with salt and pepper.
- Stuff the pita with the mince mixture and drizzle with olive oil.
- Heat a fry-pan over med. heat and sear the open side of the pita for 2-3 mins until a crust forms. Flip and toast both sides of the pita until golden brown.
- Place all the arayes on a lined baking tray and into the oven. Cook for 10 – 15 mins until the mince is fully cooked or the internal temp. reaches 75°C.
- Meanwhile, make the sauce by combining all the sauce ingredients in a bowl, then season with salt and pepper.
- Serve the arayes with the garlic yoghurt sauce and enjoy!
