Pork Arayes with Garlic Yoghurt Sauce

What you’ll need

INGREDIENTS

  • 500g SunPork Fresh Foods Pork Mince
  • 1 onion, finely chopped
  • ½ cup parsley, roughly chopped
  • ½ cup coriander, roughly chopped
  • 5 garlic cloves, minced
  • 1 Tbsp. ground coriander
  • 1 Tbsp. cumin
  • 1 Tbsp. smoked paprika
  • 2 tsp. cinnamon
  • 1 Tbsp. allspice
  • 3 pitas, halved
  • Salt and pepper, to season
  • Oil

Garlic Yoghurt Sauce

  • ½ cup Greek yogurt
  • 2 Tbsp. parsley, roughly chopped
  • 2 Tbsp. coriander, roughly chopped
  • 2 Tbsp. lemon juice
  • ¼ cup tahini
  • 3 garlic cloves, minced
  • 1 Tbsp. olive oil

How to make it

  1. Pre-heat fan forced oven to 180°C.
  2. In a large bowl, combine pork mince, onion, parsley, coriander, garlic, spices and 1 Tbsp. olive oil then season with salt and pepper.
  3. Stuff the pita with the mince mixture and drizzle with olive oil.
  4. Heat a fry-pan over med. heat and sear the open side of the pita for 2-3 mins until a crust forms. Flip and toast both sides of the pita until golden brown.
  5. Place all the arayes on a lined baking tray and into the oven. Cook for 10 – 15 mins until the mince is fully cooked or the internal temp. reaches 75°C.
  6. Meanwhile, make the sauce by combining all the sauce ingredients in a bowl, then season with salt and pepper.
  7. Serve the arayes with the garlic yoghurt sauce and enjoy!
