MKR's Dan & Steph: Farmhouse Sausage Frittata

What you’ll need

  1. 6 precooked left over Dan & Steph’s Farmhouse sausages, sliced on an angle
  2. 1 brown onion, diced
  3. 2 cloves of garlic, crushed
  4. 200g of sweet potato, peeled & grated
  5. 50g of baby spinach
  6. 1/3 cup of frozen peas
  7. 8 free range eggs, slightly beaten
  8. ¼ bunch of basil, finely chopped
  9. Salt & white pepper

How to make it

  1. Preheat grill in oven on high.
  2. With a large fry pan, spray well with oil & place over stove on med to high heat.
  3. Add onion to the pan & cook for 3-4 mins while stirring to soften.
  4. Add garlic and sweet potato then cook for 2 mins. Add the sausages and stir to combine.
  5. Add spinach & allow to wilt then add peas. Stir through until cooked & heated through.
  6. Add the beaten eggs to the pan & allow to spread out evenly. Sprinkle with salt & pepper, cook for 5 mins on the stove then transfer to the grill for a further 5 mins. Cook until golden and set.
  7. Use a spatula to loosen & release the sides of the frittata from the pan. It should then slide straight onto a plate for serving.
  8. Serve with some fresh or grilled lemon slices.
