Maple Bacon Anzac Biscuits

What you’ll need
- 500g streaky bacon, diced
- 2 Tbsp. maple syrup
- 1 cup rolled oats
- 1 cup plain flour
- 2/3 cup brown sugar
- 2/3 cup desiccated coconut
- 120g butter
- 2 Tbsp. golden syrup
- 1/2 tsp. bicarbonate soda
How to make it
- Preheat fan forced oven to 150 degrees. line 3 baking trays with baking paper.
- Heat medium fry pan over high heat. Cook bacon until crispy. Remove and pat dry with paper towel.
- Clean fry-pan and return to high heat. Return bacon to fry pan and add maple syrup. Cook until maple syrup has thickened and bacon is coasted and sticky.
- Combine oats, flour, coconut and bacon in a bowl.
- Place butter, syrup and 2 Tbsp. cold water in a saucepan over med. heat. Stir until butter has melted. Add bicarbonate or soda.
- Add butter mix to flour mix and stir to combine.
- Roll level Tbsp. of mixture into balls and place on baking tray 10cm apart.
- Flatten slightly and bake for 12 mins or until golden. Allow to stand on tray, then remove to cooling rack.
