What you’ll need

INGREDIENTS

  • 8 SunPork Fresh Foods Bacon Rashers
  • 150g Butter unsalted, softened to room temperature
  • ½ tsp onion powder
  • Salt and pepper

How to make it

  1. Cook bacon in frypan over med. heat until crispy. Remove from heat and drain on paper towel, reserving 1 Tbsp. bacon fat.
  2. In a food processor, blitz bacon to form bacon crumb.
  3. Place bacon crumb, butter, bacon fat, onion powder and pepper in bowl and mix well, add salt to taste.
  4. Spoon butter into bowl, piping bar or roll into log with plastic wrap to set.
  5. Refrigerate until ready to use

VARIATIONS

  • Like it spicy, add jalepenos or your favourite chili
  • Add some finely diced roasted garlic
  • Make it cheesy with finely grated fresh parmesan cheese.
  • Substitute the chives for another herb like rosemary, parsley or thyme leaves.

STORAGE

  • Freeze in ice cube tray or small zip lock bag
