What you’ll need

INGREDIENTS

  • 1 SunPork Fresh Foods Half Leg Ham
  • 1 lemongrass stalk, quartered and bruised
  • 5cm piece ginger, sliced
  • 2 kaffir lime leaves
  • 1 cup caster sugar
  • 2 cups water
  • 1 lime, thinly sliced, to garnish
  • 1 red chili, finely chopped, to garnish

How to make it

  1. Pre-heat fan forced oven to 160°C.
  2. In a pot over low heat, combine the lemongrass, ginger, lime leaves, sugar, and water. Stir until the sugar dissolves, then increase the heat to med-high and bring to a boil. Lower the heat and simmer for about 20 mins, until the mixture thickens into a syrup-like consistency. Set aside to cool, then strain.
  3. Prepare the ham by cutting through the rind just below the shank. Starting at the opposite end, use your fingers to carefully separate the rind from the fat and discard the rind. Using a sharp knife, score the fat, being careful not to cut into the meat.
  4. Wrap the shank in foil. Place the ham on a wire rack in a roasting pan and fill the pan’s bottom with boiling water.
  5. Generously brush the glaze over the ham. Roast for 1 hr and 30 mins, basting with the remaining glaze every 15 mins, until the ham is golden and caramelized.
  6. Remove the ham from the oven and discard the foil from the shank. Garnish with lime slices and chopped chili.
  7. Serve and enjoy!
