What you’ll need

INGREDIENTS

  • 2 racks SunPork Fresh Foods Meaty Loin Ribs
  • 4 Tbsp. Dijon mustard
  • 2 Tbsp. garlic powder
  • 2 Tbsp. onion powder
  • 2 Tbsp. smoked paprika
  • 1 tsp. salt
  • 1 tsp. ground black pepper
  • 1 cup hot honey (we used Sweet Heat Co. Hot Honey)
  • 4 Tbsp. butter
  • 1 tsp. dried chilli flakes, garnish

How to make it

  1. Pre-heat barbecue or smoker to 135°C/275°F.
  2. Prepare ribs by removing the membrane from the bone side of the rack and brush each rack with Dijon mustard all over.
  3. In a small bowl, combine garlic powder, onion powder, smoked paprika, salt and pepper and rub over both sides of the rib racks, cover and refrigerate for 1 hr.
  4. Place ribs into the smoker bone side down for approx. 75 mins or until internal temp. reaches 65°C/145°F.
  5. Remove from smoker and place each rib rack onto a large sheet of foil, drizzle ¼ cup of hot honey over the meaty side of each rack and add 2 Tbsp. of butter to each, then wrap tightly.
  6. Return ribs to smoker, meat side down for approx. 2 hrs or until meat on the bone is tender.
  7. Remove ribs from smoker, unwrap and brush generously with remaining hot honey.  Return to smoker uncovered bone side down for approx. 10 mins or until sticky.
  8. Remove from smoker, rest for 10 mins and slice into fingers.
  9. Sprinkle with chilli flakes to garnish.
  10. Serve and enjoy!
