Filipino Style Pork Belly Skewers

What you’ll need

INGREDIENTS

  • 1.5kg SunPork Fresh Foods Rindless Pork Belly, cut into 3cm cubes
  • 6 bamboo skewers, soaked
  • Crushed peanuts, to serve

MARINADE

  • 3 Tbsp. fish sauce
  • 2 Tbsp. oyster sauce
  • 1 cup tomato sauce
  • 4 garlic cloves, grated
  • ¾ cup brown sugar
  • ½ cup pineapple juice
  • ½ tsp. ground white pepper

DIPPING AND BASTING SAUCE

  • 1 cup apple cider vinegar
  • 4 Tbsp. fish sauce
  • 4 Tbsp. caster sugar
  • 1 shallot, finely diced
  • 2 garlic cloves, grated
  • 1 red chilli, thinly sliced
  • 2 Tbsp. coriander, chopped
  • Salt and pepper, to taste

How to make it

  1. In a large mixing bowl, combine all the marinade ingredients with the pork belly pieces and refrigerate for at least 1 hr, preferably overnight.
  2. Pre-heat fan-forced oven to 180⁰C.
  3. Thread 4-5 pieces of pork belly onto the skewers and onto a lined baking tray. Place into the oven for 40 mins or until the pork begins to char on the edges.
  4. Meanwhile, in a small mixing bowl combine all the ingredients for the dipping sauce and mix until the sugar has dissolved, then pour half into another bowl and baste the pork belly every 10 mins.
  5. Remove pork belly from the oven and allow to rest for 5 mins.
  6. Sprinkle crushed peanuts over the top.
  7. Drizzle generously with the remaining dipping sauce and enjoy!
