What you’ll need

INGREDIENTS

  • 1kg Pork mince
  • 18 Wonton pastries
  • 2 onions, minced
  • 2 tsp. garlic, minced
  • 1 tsp. ginger, minced
  • 3 Tbsp. hoisin sauce
  • 2 Tbsp. soy sauce
  • ½ tsp. dark soy sauce
  • 1 Red chilli, sliced to serve
  • 4 Spring onions, thinly sliced to serve
  • Salt and pepper, to taste
  • Vegetable oil
  • Aluminium foil

How to make it

  1. Fill a deep saucepan with 3-4 cm of oil over med heat.
  2. While it’s heating up, take a about 30-50 cm of aluminium foil and scrunch it up to form a log. Test the temperature of the oil by dipping a wooden skewer or spoon into the bottom and if bubbles start rapidly appearing the oil is hot enough. Wrap the wonton pastry around the foil log, do not pinch it closed. Carefully place into the oil and fry for 1 min or until golden. Remove from saucepan and let any excess oil drip out from it. Repeat for the all the remaining pastries. You can reuse the foil log, just be careful as it will have pockets of oil in there.
  3. In a large fry-pan over high heat, fry the onions, garlic and ginger until the onions become translucent. Add in the mince in and brown all over. Next add in the hoisin sauce, soy sauce and dark soy into the fry-pan and stir through until cooked.
  4. Carefully spoon the mince into the wonton pastry. Sprinkle the spring onions and chilli over the top.
  5. Serve and enjoy!
