Dan Dan Noodles

What you’ll need

  1. 400g SunPork pork mince
  2. 1/3 cup sesame oil
  3. 6 cloves garlic, crushed
  4. 2 Tbsp. Chili Flakes
  5. 1/2 cup soy sauce
  6. 1/4 cup hoisin sauce 
  7. 1 Tbsp. Honey
  8. 2 Tbsp. rice vinegar
  9. 3 Tbsp. peanut butter
  10. 300g Hokkien noodles
  11. 2 1/2 cups chicken stock
  12. 2 cups fresh baby spinach
  13. 2 cups mushrooms
  14. 1 shallot, diced
  15. 4 spring onions, sliced

How to make it

  1. Heat fry-pan over med. heat. Add sesame oil, garlic and chili flakes. Cook until garlic is fragrant (approx. 4 mins) the remove from heat and transfer into jar. Set aside.
  2. Combine soy sauce, hoisin sauce, honey, vinegar, peanut butter and 1/3 cup water in a bowl.
  3. Heat saucepan over med. heat. Add the chicken stock and ½ of the soy sauce mixture and bring to a simmer. Stir through spinach then set aside.
  4. Heat fry-pan over med. heat. Add the pork mince and cook until brown. Add mushrooms and shallots and season with pepper. Add remaining soy sauce mixture and bring to a simmer until the sauce is covers and begins to caramelize the mince. Stir in 3 Tbsp. of chili oil then remove from heat.
  5. Cook noodles according to pack instructions.
  6. Divide the broth into bowls, add the noodles and top with spring onions and chili oil
