Cola Ribs with Grilled Corn

What you’ll need
INGREDIENTS
- 2 racks SunPork Fresh Foods Meaty Loin Ribs
- 850ml cola
- 1 tsp. fresh ginger, minced
- 2 garlic cloves, minced
- 1 tsp. ground onion powder
- 1 tsp. smoked paprika
- 1 Tbsp. maple syrup
- ¼ cup smoky barbecue sauce
- 1 red onion, sliced into thick rings
- 500g chat potatoes
- 2 corn cobs, husks removed, cut into rounds
- Fresh parsley, to serve
How to make it
- In a deep dish, cover the ribs with 375ml cola, turning ribs to ensure they are evenly coated. Cover & refrigerate overnight to marinate.
- Preheat fan-forced oven to 160⁰C.
- In a saucepan over med. heat combine, 375ml cola, ginger, garlic, onion powder, paprika, maple syrup and barbecue sauce. Reduce by a quarter or until sauce starts to thicken.
- Transfer ribs to a deep, lined baking tray, brush ribs lightly with sauce to cover, then reserve the remaining sauce for basting. Add ½ cup water into the base of the tray.
- Bake for 90 mins, basting every 15 mins with the sauce.
- 6. Add remaining cola and place onion, potato and corn around tray then bake for a further 90 mins.
- 7. Sprinkle with parsley and serve.
