Cola Ribs with Grilled Corn

What you’ll need
INGREDIENTS
2 racks SunPork Fresh Foods Meaty Loin Ribs
850ml cola
1 tsp. fresh ginger, minced
2 garlic cloves, minced
1 tsp. ground onion powder
1 tsp. smoked paprika
1 Tbsp. maple syrup
¼ cup smoky barbecue sauce
1 red onion, sliced into thick rings
500g chat potatoes
2 corn cobs, husks removed, cut into rounds
Fresh parsley, to serve
How to make it
In a deep dish, cover the ribs with 375ml cola, turning ribs to ensure they are evenly coated. Cover & refrigerate overnight to marinate.
Preheat fan-forced oven to 160⁰C.
In a saucepan over med. heat combine, 375ml cola, ginger, garlic, onion powder, paprika, maple syrup and barbecue sauce. Reduce by a quarter or until sauce starts to thicken.
Transfer ribs to a deep, lined baking tray, brush ribs lightly with sauce to cover, then reserve the remaining sauce for basting. Add ½ cup water into the base of the tray.
Bake for 90 mins, basting every 15 mins with the sauce.
6. Add remaining cola and place onion, potato and corn around tray then bake for a further 90 mins.
