What you’ll need

INGREDIENTS

  • 4 rashers SunPork Fresh Foods Bacon
  • ½ cup maple syrup
  • ½ cup butter, cut into small cubes and softened
  • ⅔ cup peanut butter
  • ½ cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • ⅔ cup plain flour
  • 1 tsp. baking powder
  • 50g chocolate chips
  • 50g sweet roasted peanuts, chopped
  • ½ tsp. salt
  • 1 bag mini choc or choc peanut candy shelled Easter eggs

How to make it

  1. Pre-heat fan forced oven to 180⁰C.
  2. Lay the bacon on a lined oven tray, brush with maple syrup and bake in the oven for 15 mins or until crispy.
  3. Remove bacon and allow to cool then crumble into smaller pieces and set aside.
  4. Melt butter and ⅓ cup peanut butter in a saucepan or in the microwave, and mix well to combine.
  5. Cream butter and sugars using a beater, then add egg and vanilla and mix.
  6. Add flour, baking powder and salt then stir. Add bacon, choc chips and nuts then mix gently.
  7. Transfer to a lined and greased baking dish and smooth flat.
  8. Heat remaining peanut butter until runny and pour over the top of the mixture, then press top with Easter eggs.
  9. Bake for 30 mins, then remove from the oven and allow to stand for 10 mins.
  10. Cut into fingers or squares to serve.
  11. Serve and enjoy!
