What you’ll need
INGREDIENTS
- 4 rashers SunPork Fresh Foods Bacon
- ½ cup maple syrup
- ½ cup butter, cut into small cubes and softened
- ⅔ cup peanut butter
- ½ cup brown sugar
- ½ cup white sugar
- 2 eggs
- 1 tsp. vanilla extract
- ⅔ cup plain flour
- 1 tsp. baking powder
- 50g chocolate chips
- 50g sweet roasted peanuts, chopped
- ½ tsp. salt
- 1 bag mini choc or choc peanut candy shelled Easter eggs
How to make it
- Pre-heat fan forced oven to 180⁰C.
- Lay the bacon on a lined oven tray, brush with maple syrup and bake in the oven for 15 mins or until crispy.
- Remove bacon and allow to cool then crumble into smaller pieces and set aside.
- Melt butter and ⅓ cup peanut butter in a saucepan or in the microwave, and mix well to combine.
- Cream butter and sugars using a beater, then add egg and vanilla and mix.
- Add flour, baking powder and salt then stir. Add bacon, choc chips and nuts then mix gently.
- Transfer to a lined and greased baking dish and smooth flat.
- Heat remaining peanut butter until runny and pour over the top of the mixture, then press top with Easter eggs.
- Bake for 30 mins, then remove from the oven and allow to stand for 10 mins.
- Cut into fingers or squares to serve.
