What you’ll need

INGREDIENTS

  • 2 rashers SunPork Fresh Foods Bacon, diced
  • 1 cup ricotta
  • 3 Tbsp. olive oil
  • 1 tsp. lemon zest
  • 250g mushrooms, sliced (mix of shiitake, oyster etc.)
  • 2 Tbsp. butter
  • 1 garlic clove, minced
  • 2 Tbsp. lemon juice
  • ¼ tsp. cayenne pepper
  • 4 slices ciabatta / sour dough
  • 50g rocket leaves
  • Lemon wedge, to serve

How to make it

  1. Mix whipped ricotta by blending ricotta, 2 Tbsp. olive oil, lemon zest, and a pinch of salt until smooth and set aside.
  2. In a fry-pan over med. heat cook bacon, add mushrooms and butter and cook until softened.  Add garlic, lemon juice and cayenne pepper.
  3. While bacon and mushrooms are cooking, toast bread until golden.
  4. Spread ricotta over toast, top with rocket and mushroom mix.
  5. Serve with a wedge of lemon and enjoy!
