Greek Pork Chop Tray Bake

What you’ll need
- 4 Pork Chops
- 2 potatoes, cubed
- 3 tomatoes, cut into wedges
- 1 onion, cut into wedges
- 1 yellow pepper, sliced
- 1 red pepper, sliced
- 1 courgette, halved legnthways and sliced
- 100g kalamata olives
- Handful of fresh oregano, finely chopped
- Few sprigs of lemon thyme
- Juice of ½ a lemon
- 4 Tbsp. olive oil
- Salt and pepper, to taste
- 100g feta
How to make it
- Pre-heat a fan forced oven to 200°C. Line a large oven tray with baking paper.
- Mix together the vegetables, olives, oregano, lemon thyme, lemon juice, 3 Tbsp. of olive oil, salt and pepper in a large mixing bowl.
- Transfer vegetables to lined baking tray and spread out evenly. Bake for 20 mins.
- Meanwhile, heat the remaining 1 Tbsp. of oil in a frying pan on high heat. Sear the pork chops for 1-2 mins on each side until slightly browned.
- Flip vegetables and place pork chops on top. Crumble on feta and bake for a further 15-20 mins.
