What you’ll need
INGREDIENTS
- 1kg SunPork Pork Leg, cut into 4cm cubes
- 1 ½ cups flour
- ½ cup corn flour
- 1 Tbsp. salt
- ½ Tbsp. dried thyme
- ½ Tbsp. dried basil
- ½ Tbsp. oregano
- 1 Tbsp. smoked salt
- 1 Tbsp. black pepper
- 1 Tbsp. mustard powder
- 4½ Tbsp. paprika
- 2 Tbsp. garlic powder
- 1 Tbsp. ground ginger
- 3½ Tbsp. white pepper
- 1 Tbsp. onion powder
- 250ml soda water, cold
- ½ cup cornflakes
- ½ cup puffed rice
- ½ cup rolled oats
- 2 cups vegetable oil
- Maple syrup, to serve
How to make it
- In a large bowl, combine all the dry ingredients except the cornflakes, puffed rice and rolled oats. Remove ½ cup of the dry mixture, place onto a plate and set aside. Add soda water to the bowl and stir to combine.
- On a large plate, combine cornflakes, puffed rice and rolled oats. Crush roughly with the back of a spoon to small pieces.
- Take the pork pieces and roll them in the dry mixture. Shake off any excess, dip into the wet mixture then roll in the cereal mix. Dip it back into the wet mixture and back into the cereal mix.
- Heat a large saucepan over medium heat and add vegetable oil till 2-3 cm deep. When heated, test the temp. by adding a small piece of cornflake. The piece should sizzle straight away. When hot, carefully add the pork working in small batches. Fry for 3-4 mins or until golden brown. Place onto paper towel to drain.
- Serve with maple syrup and enjoy!
