What you’ll need
INGREDIENTS
- 1 SunPork Fresh Foods Pork Tenderloin
- 8 rashers SunPork Fresh Foods Bacon
- 4 Tbsp. Cajun seasoning
- 1 Tbsp. brown sugar
- 2 garlic cloves, crushed
- 1 cob loaf, cut into small pieces
- 3 Tbsp. olive oil
- ½ tsp. garlic powder
- ¼ tsp. oregano
- Salt and pepper, to taste
- ⅔ cup parmesan cheese, grated
- 1 cos lettuce
Sauce
- 4 Tbsp. mayonnaise
- 2 tsp. lemon juice
- 1 tsp. Worcestershire sauce
- ½ tsp. Cajun seasoning
- 2 Anchovies, crushed
How to make it
- Preheat fan-forced oven to 190⁰C.
- In a bowl combine Cajun seasoning, brown sugar, garlic and olive oil. Add pork and cover all over, place in the fridge to marinate.
- On a lined baking tray, place bread pieces and drizzle with olive oil, followed by garlic powder, oregano, ⅓ cup parmesan and season with salt and pepper and toss gently.
- Bake for 10 mins or until golden, set aside to cool.
- On a separate lined baking tray, lay out bacon rashers and bake for 15mins.
- To make the dressing, combine mayonnaise, lemon juice, Worcestershire sauce, Cajun seasoning and anchovies in a bowl and whisk to combine then set aside.
- Place pork on baking tray or BBQ for approx. 20 mins or until cooked through, remove from oven and wrap in foil to rest. Slice pork.
- Take lettuce, add dressing and combine. Top with croutons, parmesan and sliced pork.
- Serve and enjoy!
