BBQ Pineapple Pork Chops
Our BBQ Pineapple Pork Chops are ready in 30 minutes and perfect for a mid week dinner. These perfectly cooked pork chops lathered in a sweet and smokey sauce will have you licking your lips before it's even ready.

What you’ll need
INGREDIENTS
- 6 SunPork Fresh Foods Pork chops
- 2 tsp oil
- 400g tin pineapple rings, juice reserved
- ½ cup barbecue sauce
- 1 Tbsp. chipotle
- 1 Tbsp. raspberry jam
- 2 spring onions, sliced
- 1 jalapeno, sliced
- 3 cups steamed rice, to serve
How to make it
- Pre-heat fan forced oven to 180⁰C.
- Heat oil in a large fry-pan over med. heat, then cook pork chops for 3 mins on each side until nicely browned. Remove from the pan and place into a casserole dish or oven safe fry-pan.
- Add half the reserved pineapple juice to the same pan and use a spatula to scrape off the caramelised pork pieces.
- Add barbecue sauce, chipotle and raspberry jam, then cook 7 mins until sauce begins to thicken.
- Spoon sauce over each pork chop, add pineapple rings and place casserole dish into the oven for approx. 5-10mins or until pineapple rings start to caramelize and the pork is cooked through.
- Remove from the oven and garnish with spring onion and jalapenos.
- Serve with steamed rice and enjoy!
