Maple Bacon Cake
Put together this impressive 3 tier maple bacon cake for your next celebration. It won’t go bacon your heart.

What you’ll need

Cake Batter

  • 3 cups cake flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 cup unsalted butter
  • ½ cup vegetable oil
  • 1 cup brown sugar
  • 1 cup maple syrup
  • 6 eggs
  • 2 egg yolks
  • 1 cup buttermilk
  • 2 vanilla bean pods

 

Buttercream

  • 2 cups unsalted butter
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 780g icing sugar, sifted
  • ¼ cup maple syrup

 

Bacon Topping

  • 6 streaky bacon, diced
  • ½ cup brown sugar

How to make it

  1. Preheat fan-forced oven to 180OC
  2. Line three 6in cake tins with baking paper.
  3. In a mixing bowl whisk together cake flour, baking powder and salt.
  4. In another bowl mix butter, oil, brown sugar and maple syrup for 10 mins. Add in one egg at a time. Continue to mix until well combined.
  5. Add in the flour mixture to the butter mixture and mix until combined. Pour buttermilk in and scrape beans in from the pods. Keep mixing until incorporated.
  6. Divide the cake batter evenly among the cake tins. Bake for 40 mins. Insert toothpick in the centre and if it comes out clean it’s cooked. Remove from the tins and allow to completely cool.
  7. Put bacon on a baking tray and cover with brown sugar. Put in oven and bake for 15 mins. Allow to cool and set side.
  8. Place all the buttercream ingredients into a bowl and mix until combined and set aside.
  9. Shave the top part of the cake so its flat. Spoon some icing and candied on to the cake and spread evenly. Place another cake on top and repeat. Leave enough bacon for the topping.
  10. Fill a piping bag with the remaining icing. Place cake onto a cake turner and pipe icing around the cake. Use a pallet knife to smooth out the icing around and on top of the cake. Place the rest of the bacon on top.
  11. Serve and enjoy!
