What you’ll need
8 SunPork Pork Loin Steaks
1/8 tsp. ground cinnamon
2 tsp. cumin
2 tsp. paprika
100g natural yoghurt + extra to serve
1 tsp. oregano
2 lemons, rind & juice
2 Tbsp. olive oil
Couscous
1 cup couscous
3 spring onions, sliced
20g black olives
100g cherry tomatoes, halved
½ red capsicum, thinly sliced
½ cucumber, sliced
How to make it
Combine the cinnamon, cumin, paprika, yoghurt, oregano and 2 Tbsp.
lemon juice in a bowl.
Add the pork and coat well.
Allow to marinate for 30 mins or ideally overnight.
Prepare couscous according to pack instructions.
Once cooled, add the spring onions, black olives, cherry tomatoes, red
capsicum, cucumber and 1 Tbsp. of lemon rind and stir to combine.
Heat the oil in a fry-pan over med heat.
Cook the steaks for 4 mins each side or until cooked through.
Serve the steaks with couscous, a side of yoghurt and a drizzle of
lemon juice.
