What you’ll need
INGREDIENTS
- 500g SunPork bacon, diced
- Oil
- 40 garlic cloves, peeled
- 2 shallots, diced
- 140g cream cheese, softened
- 50g Parmesan, finely grated
- 4 Tbsp. parsley, chopped
- 2 Tbsp. chives, chopped
- 1 lemon, juiced
- Salt and pepper, to taste
How to make it
- In a pan over med. heat, cook the bacon until crispy. Remove and set aside, reserving the bacon fat.
- Reduce heat to low, add a splash of oil to the reserved bacon fat, then add the garlic cloves and shallots. Cook for 15-20mins stirring often or until golden and caramelised.
- Strain the garlic and shallots from the oil, then mash with a fork.
- Stir in the cream cheese, Parmesan, herbs, and lemon juice until well combined. Fold through the crispy bacon. Season to taste with salt and pepper.
- Serve warm or chilled with crusty bread, crackers, or chips.
